Copper is a contact fungicide, been used in Bordeaux mixture probably since before even you were around, that forms a protectant barrier against fungal spores, instead try a commonly available systemic one such as

Fungal probs are usually a sign of poor air movement, so make sure your trees are well pruned to allow plenty of air movement through the trees

Everything is dormant now, so give the trees a spray with lime sulphur, kills everything, gets the populations of all the nasty diseases and bugs down, then once all your new foliage has come through in the Spring, and hardened up, that's when to use the systemic fungicide
